The best way to pair balsamic vinegar

Each type of balsamic vinegar has its own unique flavor and character. Valentina Mattioli, the manager of Villa San Donnino shares her tips on how best to pair each variety with different dishes to bring out its full potential:

Villa San Donnino Bianco - light, slightly sweet vinegar

Aged 2 years in steel

Great with white fish, chicken, salads.
Try on cucumbers, tomatoes, potatoes.
Ideal for marinating meat.
Refreshing in water with mint and peach.

Villa San Donnino Nerone - rich with caramel notes
Aged 6 years, 

Drizzle on gelato, roasted veggies, salads.
Perfect with fresh fruit or as a dip with bread.

Traditional Balsamic 

Aged 12 years, is marked with a white cap

Adds depth to risotto, steak, lamb.
Great with chocolate, berries, figs.
Use as a final touch — not for cooking.

Extra-Old Traditional Balsamic

Aged 25 years, is marked with a gold cap
