The important thing to note is the smoke point, which refers to the temperature at which an oil or fat will start to give off visible smoke and begin to break down, therefore changing the flavor of your food.
EVOO has a high smoke point and home cooks generally do not fry food using intense heat, so you can feel confident frying with extra virgin olive oil!

For the best results when using EVOO to fry, your food should: Be fully cooked Have a beautiful golden crust on the outside Not be greasy

The Jewish Quarter of Rome, also known as the Ghetto Ebraico di Roma or simply Roman Ghetto (Ghetto di Roma) was established in 1555, making it one of the oldest Jewish communities in the world. It is a vibrant area known for its history, culture, and delicious Jewish-Roman cuisine, including the famous Carciofi alla Giudia (Jewish-style artichokes).
When are artichokes in season? February – April (Peak season for Roman artichokes – the best time!). November – January (Early season, still good but less common).
