Each year, new grape must is added to wooden barrels, but some of the aged vinegar always stays behind — a portion is never removed. Don’t confuse Traditional Balsamic Vinegar with “balsamic glaze” or sauce. Traditional Balsamic Vinegar contains no sugar, caramel, or thickeners - just cooked grape must and craftsmanship!
