The Memory of Generations and the Taste of Time

There’s no better moment to highlight our Traditional Balsamic Vinegar from Modena — a product steeped in history, family tradition, and a deep sense of place. Crafting this vinegar is a slow, careful ritual passed down through generations.
Each year, new grape must is added to wooden barrels, but some of the aged vinegar always stays behind — a portion is never removed. That means every drop holds the essence of years gone by — sometimes decades or even centuries — like a liquid archive of memory and time. It’s history you can taste.

For over 500 years, the Lonardi family at Acetaia San Donnino has perfected the art of crafting traditional balsamic vinegar. From the rare DOP Aged 12 & 25-year gems, to the bold Nerone (aged 6 years) and the more delicate, golden Bianco (aged 2 years), there's a flavor profile for every palate.

Less is More with Traditional Balsamic
At Fondo Gionino, we love to offer tips and ideas for healthier, tastier cooking!
Don’t confuse Traditional Balsamic Vinegar with “balsamic glaze” or sauce. Traditional Balsamic Vinegar contains no sugar, caramel, or thickeners - just cooked grape must and craftsmanship!
Drizzle, Don’t Drown! High-quality aged balsamic is concentrated and rich — just a few drops can transform a dish. Try it over Parmigiano-Reggiano cheese, roasted vegetables, or strawberries for a gourmet finish.
Finish, Don’t Cook! Never cook traditional balsamic vinegar — heat will flatten its complex flavors. Use it at the end: a light drizzle on steak, duck breast, or risotto, adds depth and elegance.
Sweet Meets Savory Don't be afraid to use balsamic in desserts. A touch on vanilla ice cream, panna cotta, or fresh figs creates a beautifully balanced sweet-savory contrast that surprises and delights.
Simple and sophisticated - when guests are at the door. Fresh strawberries, a scoop of vanilla ice cream, a drizzle of aged balsamic vinegar, and a sprig of mint. Just four ingredients — and you'll create a dessert worthy of a fine restaurant. Perfect for when you want to impress, effortlessly.
