Olive varieties used to produce our olive oil:
The Geracese olive, also known as Grossa di Gerace, takes its name from the historic town of Gerace in Calabria, where this traditional variety has deep roots. It is mainly grown along the Ionian coast, around Gerace and Locri. Its oil is fruity, with fresh herbal notes, a delicate bitterness, and a pleasant peppery finish, reflecting the region’s distinctive character.

The Nocellara Messinese olive is a traditional Sicilian variety, native to the Messina area, known for its medium-to-large fruits. Its oil offers a fruity aroma with notes of fresh grass, tomato, artichoke, and almond, balanced by a moderate bitterness and peppery finish. It pairs beautifully with fresh salads, grilled vegetables, fish, and Mediterranean dishes.

The Selvatica olive comes from wild olive trees that grow naturally. Their small fruits yield less oil and are more challenging to harvest, often requiring careful hand-picking. This makes Selvatica oil rare and limited in production. It is known for its intense fruity aroma, wild herbal notes, reflecting its natural origins.

Fondo Gionino EVOO is best enjoyed fresh. Unlike wine, extra virgin olive oil generally does not improve with age. Freshly harvested olives help preserve the oil’s vibrant flavour and natural antioxidants.
Fondo Gionino EVOO contains polyphenols and vitamin E, which help protect the oil from oxidation. These compounds also contribute to its characteristic bitterness and peppery finish.
Olive variety, soil, climate, and harvest time all influence the oil’s aroma and taste. From grassy and fruity notes to hints of tomato, almond, and herbs, Fondo Gionino EVOO reflects the land where it was produced.
